“Covering a large area on the sunny hills of Provence this elegant and resistant shrub fitted with silver-green leaves which simple branches in a thick erect foliage can be facing each other, lined up or in a “v” shape grows in plenty …the flowers emit a sweet and intense fragrance. The flavour is rich and a little bittersweet.”
Fournier, 1947-1948

Lavender belongs to the Lamiaceae botanical family that comprises several aromatic plants such as thyme, savory, mint or salvia.

Tradition says French lavender originates in Persia or in the Canary Islands. There are different species inside the Lavandula gender.

In Provence three species of lavender naturally grow :
lavandula vera, lavandula spica & lavandula stoechas.
